Jicama

The first challenge with this food is to pronounce it correctly. I is NOT Ja-KA-Ma. It is spanish and so it is pronounced Hi-ka-ma with the accent on the first syllable. And actually to be completely correct it really should be Hee-ka-ma, but it may sound like you are hiccuping if you aren’t careful.

Ok, Now I can say it. but what is it?

Jicama has been described as a mix between a cucumber and a pear. That is pretty close. It is crunch, but more solid than a cucumber and just slightly sweet. It is great cut up with just a little paprika sprinkled on, in salads, with hummous. Some people put it in stir fry, but I think it is much better raw.
